Dairy-free Cappuccino

A delightful soy cappuccino that doesn't take a fancy machine or even special coffee, just a simple hand-held milk frother that can be had for a couple dollars.

  • 2 Tbsp ground coffee
  • 1/3 c. soy or almond milk
  • Stevia (optional)

Heat the milk. I put mine in a microwave-safe mug and microwave for 30 seconds.

In the meantime, brew a half cup of strong coffee. I use the same amount that I would use for two regular cups and about 4 ounces of water. I’ve got a Senseo one-cup coffee maker with a programmable cup size, so that makes it easy.

While the coffee is brewing, use the milk frother according to the directions. I add a few drops of liquid stevia at this point so that it gets mixed in well. I have a cheap little hand milk frother from Tiger and it takes about 40 seconds until it’s nice and frothy.¬†When the coffee is done, pour it into the glass and pour the frothy milk over the top. Use a spoon to mound the remainder into a nice dollop on top.
