- Whatever you have on hand!
- Oil & vinegar (I use apple cider vinegar) plus salt & pepper, or your favorite dressing
Take your pick of the day: some sort of greens, like spinach, lettuce, or mixed greens. Add whatever other veggies you have around, and some seeds, nuts, beans, or corn for protein.
This particular blend was a bed of arugula, cherry tomatoes, carrots, cauliflower, vegan sausage (an Icelandic brand, Bulsur) that I sliced and then pan-fried. It’s topped with homemade pesto and a sprinkling of sunflower seeds and dried cranberries.
